Simple Veg Soup

Chunky Vegetable Soup – a tasty way to increase your vegetable intake!

?Chop veggies – whatever you have in the fridge, use up the oldest ones first. This pot had cabbage, onion, kale, tomatoes, celery, broccoli, carrots & ginger.

?Add boiling water.

?Add a stock cube (chicken or veg).

?Add any herbs & spices you like and salt/pepper. I used rosemary, thyme, tarragon, tumeric, ginger in this version, although every time I make it I always end up with a different combination.

Bring to the boil and reduce to the lowest setting, cover it and leave it simmer for an hour.

Enjoy….Blend if you dare!!.

?Macros: ZERO!!

Vegetables are packed with micronutrients – we should eat a plentiful array.
Tip: I usually avoid adding potatoes, butternut-squash or parsnips to soup as they are higher in carbs.

✳️Bonus: I also add chopped chicken to mine so it’s more like veg / chicken stew, and top with a spoonful go butter.
