Low calorie cheesey cauliflower

Cheesey Cauli Topped Cottage Pie.

Super tasty and super easy to make!

400g of lean mince beef into a pan. Add 2 chopped onions, carrots, celery and a whole net of brussel sprouts!! Or any other veggies you like. Add salt and mixed herbs.

In another pot add a whole head of chopped cauliflower and boil it until its soft. I like mine a little rustic so I don’t let it go to mush.

Add a beef stock cube (crumble straight into the mince & veg mix). I also added a beef stock pot and 2 spoons of bisto, along with about 200-300ml of boiling water – just add it in little splashes and stir it. Add it into an oven proof dish.

 When the cauli is soft, drain it and a mash it roughly. Mix through 60g of low fat cheese and then layer it on top of the mince. Top with another 20g of cheese.

Pop in into a hot oven (200) for 25mins – everything is cooked, you just want to crisp up the top.

*you can make this up earlier in the day and put it in the oven later

This is a great way to have a big plate of dinner but still save some carbs for other things like crumble or rice pudding.

When it’s done I just half it one way, and half it the other to get 4 portions.

*One whole head of cauliflower is about 40g of carbs.
